Halloumi Gyros

 Halloumi Gyros



I watched a guest on James Martin’s weekend morning show do a version of these but he cooked a whole stuffed lamb roast just for this. As nice as it looked, I figured switching it out for halloumi would be an awful lot easier and it’s veggie friendly to boot! 


You can play with the ingredients however you like though: sweet potato fries? Roasted spiced cauliflower?  falafels? Spicy chicken? meatballs? Roasted sweet potato chunks? Cabbage? Rare steak and watercress? Swap out the sauce for a drizzle of tahini? Houmous? or a sweet chilli sauce? etc. The options are endless! 


It’s also easy enough to make this vegan by switching out the cheese and sauce ingredients for plant based alternatives. 


You will need:

Gyro wraps (I got mine from Asda)

Cocktail sticks or cut down skewers - you need these to keep the wraps closed

Halloumi marinaded in chilli (sliced)

Oven French fries

Iceberg lettuce (shredded)

Carrot (grated/shredded)

Cucumber (cut into sticks, de-seeded and then cut into thin shards on the diagonal)

Sriracha

For the sauce:

3tbsp Natural fat free yogurt 

3tbsp Mayonnaise 

2tbsp Fresh coriander (finely chopped)

Salt and pepper 


How:

  1. Bake the French fries as per packet 
  2. 5-10 minutes before the fries are cooked fry the halloumi in a dry non-stick frying pan, turning once till golden and blistered
  3. Warm the gyro breads in the microwave for 30-60 seconds to make them more flexible
  4. Mix the sauce ingredients in a bowl till smooth 
  5. Spread a little of the sauce onto each bread and too with salad and then the halloumi, drizzle the halloumi with a little sriracha and the. Top with a small handful of fries and a drizzle of a little more of the sauce. 
  6. Then bring the sides of the bread up to form a cone shape and secure in place with a cocktail stick. As long as you e warmed the bread you’ll be surprised how much it will stretch to go around the enormous filling.
  7. joyfully apply to face. 
My sauce recipe makes far more than you need for 4 wraps but I’m planning on using the rest later with another dish so feel free to scale it down. It’s just half mayo, half yogurt - easy!
